1/2 cup crushed pineapple, canned in own juice
1 medium orange, peeled and sectioned
1 teaspoon vanilla extract
1 teaspoon orange extract
5 ice cubes
Sprinkle of nutmeg, optional

DIRECTIONS
Blend Ensure, pineapple, orange, extracts, and ice cubes in blender on high speed until smooth. Pour into glass and sprinkle with nutmeg.

Green Tea Poached Fish
INGREDIENTS
4 cups Celestial Seasonings Antioxidant Green Tea
2 teaspoons grated ginger
2 teaspoons minced garlic
2 teaspoons minced white onion
1 1/2 to 2 pounds fish (4 small steaks or 2 large ones) Use any firm fish; salmon works well.
Salt and pepper

DIRECTIONS
To make green tea, pour hot but not boiling water over tea bags and steep for 5 minutes. Use one tea bag for every 8 ounces (1 cup) of hot water.
In a deep skillet, simmer green tea, ginger, onion and garlic for 10 minutes.
Salt and pepper fish steaks and place them gently into the poaching liquid. Adjust heat to a gentle simmer, and cook 8-10 minutes until fish is slightly translucent.
Remove fish and serve.
